Thanksgiving

I didn't make it home for Thanksgiving this year, but I still had a great celebration with some close friends. Iris, Kevin, Adan, and I made our own dinner. I brought two strawberry rhubarb pies, homemade rolls, green bean casserole, and pumpkin cider. Sadly, I didn't get a picture of the pumpkin cider and all of its deliciousness.




Pumpkin Cider Recipe
~2:1 Ratio of Apple Cider to Pumpkin Puree (I originally did 1:1 like the recipe told me, but it was way too thick. I played around with it until I got the consistency I liked)
Nutmeg and Pumpkin Pie Spice to taste
Cinnamon Sticks
Whipped Cream

In a large saucepan, mix together the pumpkin puree and apple cider on medium-low heat. Once the puree and cider have mixed together nicely, add in nutmeg, pumpkin pie spice, and a cinnamon stick. Simmer, stirring occasionally, for approximately 20 minutes. Serve hot and garnished with whipped cream and a cinnamon stick.
